Hello!
I'm looking for a way, if it's possible, to extract / read the files from the 360 version of tony hawk's project 8 (I'm mainly interested because I do ports of maps for Tony Hawk's Underground Pro).
The files are all mostly in .pak.xen, although there are a few other different formats like .pab

I tried using 7zip as suggested online but it does not work.
I have also looked into the PS3 version but the files are in .chk and I've been told the 360 version should be easier to unpack.
The .xen format seems to be just a placeholder extension, it was also there in Guitar Hero apparently, by the same developers:

You can extract anything and everything from pak.xen file packages with QueenBee. It's a tool made for Guitar Hero games. it works on Tony Hawk games too.
pab.xen are the actual files, while the pak.xen just contains information where and what names the files have in the pab file. So just open the pak file with queenbee using the Xbox(xen) setting,
