I'm sorry if I keep asking for help.
Anyway, any script to extract .pac files?
That contains animation, models, and sprites from 2D Events mode.

You need to reverse engineer the game, not sure if someone can help you.

Literally first link in google for "Mario & Sonic at the Olympic Games Tokyo 2020 pac files" is explaining how to unpack those files. Dump romfs with Switch Explorer or anything -> properly unpack cpk with CriToolpack or anything -> unpack pac with Switch Toolbox -> convert textures with Intel Texture Works plugin or anything.

Proof of concept: properly unpacked pac + extracted files + converted example texture
